OREGON PRUNE BREAD

2 cups prunes, pitted, and chopped
2 cups boiling water
2 tsp baking soda
1 1/4 cups sugar
2 tbsp soft butter, or margarine, softened
1 egg
1 tsp vanilla
4 cups flour
2 tbsp baking powder
1 tsp salt
1 cup chopped nuts, your choice

Pre-heat oven to 350 degrees F. Grease 2 (8x4 inch) loaf pans

In a large bowl, combine the prunes, 2 cups boiling water, and baking soda; stir and let cool.

Cream the sugar and butter together until fluffy. Add the egg and vanilla; set aside.

Drain prunes and save the liquid; set aside.

Combine the flour, baking powder, and salt together and add to the sugar mixture alternately with prune liquid, beginning and ending with flour.

Stir in the prunes and nuts. Pour into greased loaf pans.

Bake for 1 hour. Cool in pans for 10 minutes before removing from pans and placing on cooling rack.

Makes 2 loaves
