Absolutely delicious! Don't wait for summer, enjoy this all year round.
FRESH SHRIMP AND CRAB SALAD
FOR THE SALAD: 2 cups cooked, drained and cooled pasta, macaroni shells, spirals, etc., your choice 3/4 cup cooked lump crab meat (fresh, not imitation) (your supermarket should have it already cooked) 1/2 lb. medium-size cooked shrimp, shelled, and cut in half lengthwise (your supermarket should also have this) 2 ribs diced celery FOR THE DRESSING: 1 cup real mayonnaise 2 tbsp catsup 2 tbsp fresh lemon juice 1/2 tsp dillweed 2 hard boiled eggs, cooled, peeled, and grated Dash of salt
In a large bowl, combine pasta, crab, and shrimp. Add celery and toss.
In a small bowl, combine the ingredients for the dressing. Stir together until well blended. Pour over the seafood mixture, and stir only until well coated.
Refrigerate several hours, or overnight.
Serve on lettuce leaves with lemon wedges.
