SWEET POTATOES ON PINEAPPLE RINGS2 cans pineapple rings, drained
3 lb. sweet potatoes
1/2 stick (1/4 cup) butter
1/4 to 1/2 cup brown sugar (to taste)
cinnamon (to taste)
FOR THE TOPPING:mini marshmallows
maraschino cherries
Cook the sweet potatoes until fork-tender.
Preheat oven to 450 degrees F. Grease or line with foil a rimmed baking sheet.
Place pineapple rings in a single layer on the baking sheet; set aside.
Drain and mash the potatoes along with butter, brown sugar and cinnamon. Scoop onto pineapple rings and top with marshmallows and 1/2 a cherry.
Heat in 450 degree F oven for 5 minutes.
