FAT FREE CAESAR SALAD
FOR THE DRESSING: 1 cup non-fat ricotta cheese 2 tablespoons Dijon mustard 2 tablespoons Worcestershire sauce 1 clove garlic 1 lemon, juiced 2 anchovy fillets 1/4 cup non-fat milk salt and pepper FOR THE SALAD: 2 heads romaine lettuce homemade croutons
Combine ricotta, mustard, Worcestershire, garlic, lemon juice, anchovies, salt and pepper in blender. Blend until well combined. Add non-fat milk to adjust consistency.
Toss with greens and garnish.
