THREE GENERATION HERBED SPINACH PASTA
2 cups uncooked penne pasta 1/2 medium onion, sliced 1 clove garlic, minced 1 tablespoon olive oil 3/4 teaspoon basil 1 medium red, yellow or green pepper, cut in strips 1 (13 1/2 ounce) can Fresh Cut whole leaf spinach, well drained
Cook pasta according to package directions; drain and keep warm.
Cook onion, garlic and basil in oil in skillet until onion is tender.
Add pepper strips; cook 3 minutes.
Stir in spinach; heat through.
Toss with pasta and top with Parmesan cheese, if desired.
