COUNTRY HAM WITH RED-EYE GRAVY

6 slices country ham, 1/4 inch thick
1/4 cup margarine
1/4 cup firmly packed brown sugar
1/2 cup strong black coffee
Sprig of fresh mint (optional garnish)

Cut gashes in fat to keep ham from curling. Saute ham in margarine in a heavy skillet over low heat until light brown, turning several times. Remove ham from skillet, and keep warm.

Stir sugar into pan drippings; cook over low heat until sugar dissolves, stirring constantly.

Add coffee to pan drippings, stirring well. Simmer gravy 5 minutes, and keep warm.

Garnish ham slices with fresh mint, if desired. Serve gravy over ham.
