APRICOT DROPS
1 large egg 2/3 cup packed brown sugar 2 Tbsp. vegetable oil 1 Tbsp. orange juice 1 cup unbleached all-purpose flour 1 tsp. baking powder 1 tsp. grated orange rind 1/4 tsp. salt 1 cup coarsely chopped dried apricots
Preheat oven to 350 degrees F. Coat 2 baking sheets with nonstick cooking spray.
Beat the egg, brown sugar, oil, and orange juice thoroughly with an electric mixer. Add the flour, baking powder, orange rind, and salt and mix well. Add the apricots and stir to combine. Drop the batter by rounded teaspoonfuls about 2 inches apart onto the baking sheets.
Bake for 10 to 12 minutes or until the cookies are lightly browned. Cool on a wire rack. Repeat, until all the cookies are baked.
