SPINACH-STUFFED MANICOTTI
1 (10 ounce) package frozen chopped spinach, thawed 4 ounces (1/2 or an 8 ounce) package cream cheese, softened 1 cup ricotta cheese 1 cup shredded Mozzarella cheese 1/2 cup freshly grated Parmesan cheese 1 teaspoon dried Italian seasoning 1/4 teaspoon salt 8 dried manicotti shells, cooked 2 cups pasta sauce 1/2 cup freshly grated Parmesan cheese
Press spinach between layers of paper towels to remove excess moisture. Combine spinach, cream cheese, and next 5 ingredients, stirring well. Stuff mixture evenly into manicotti shells.
Pour 1/2 cup pasta sauce into a lightly greased 11 x 7-inch baking dish; arrange stuffed shells over sauce. Spoon remaining 1 1/2 cups pasta sauce over shells.
Cover and bake at 350 degrees F for 30 minutes or until thoroughly heated. Sprinkle with 1/2 cup Parmesan cheese; bake, uncovered, 5 more minutes or until cheese melts.
