Cheese Rounds (make ahead)

1 cup shredded cheddar cheese, at room temperature
1/2 cup butter or margarine, softened
1 1/4 cups all-purpose flour
1 tsp minced onion
1/4 tsp salt

Combine cheese and butter; beat until light and fluffy. Add remaining ingredients stirring well. Turn dough out to floured surface; knead 4-6 times. Chill dough.

WHEN READY TO BAKE:
Preheat oven to 400 degrees F. Lightly grease a cookie sheet.

Roll dough to 1/4-inch thickness on a floured surface. Cut with a 2-inch biscuit cutter. Place on prepared cookie sheet.

Bake at 400 degrees F for 12-15 minutes. Cool on wire racks.

Makes 1 1/2 dozen
