GENOESE SAUCE ALLA RAEOlive oil, for searing 2 1/2 pounds beef chuck, cut into 2-inch cubes 1 teaspoon salt 1 teaspoon ground black pepper 2 tablespoons unsalted butter 5 pounds onions, sliced thin 5 garlic cloves, chopped 2 boxes (10 ounces each) frozen peas 1 pound ziti or penne pasta, uncooked Heat large Dutch oven with tight-fitting lid over medium-high heat. Pour in enough oil to fill pan about 1/4 inch deep. Season beef generously with salt and pepper and add to pot. Saute meat, uncovered, stirring occasionally, until well browned, about 9 minutes. Add butter, sliced onions and garlic and stir for about 5 minutes. Add peas and cook on high heat for 3 minutes. Cover pot. Lower heat and let simmer for 1 1/2 hours, stirring occasionally.
