GILROY GARLIC MUFFINS

2 cups flour
1/2 cup Romano cheese
4 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1 cup milk
1 large egg
3 tbsp butter, melted
1 tbsp garlic oil (or vegetable oil)
2 cloves garlic, diced
1/2 cup green onion tops, diced
1/2 cup sliced green olives
1/4 cup (2 oz) diced pimientos

Preheat oven to 375 degrees F. Grease muffin pan cups.

Combine flour, cheese, baking powder, sugar, and salt and in a large mixing bowl.

Measure milk, egg, butter, oil, and garlic into a blender and combine on high speed until garlic is thoroughly chopped.

Add the green onions, olives, and pimientos to the dry mixture in the bowl. Add the wet ingredients and stir not over 10 seconds to combine. Fill greased muffin tins 3/4 full.

Bake at 375 degrees F for about 20 minutes, or until tops are lightly browned.

Makes 14 muffins
