CINNAMON APPLE SLICES

1 cup light corn syrup
1/2 cup red cinnamon candies
1/2 cup cider vinegar
8 whole cloves
1 (3-inch) cinnamon stick
4 medium-firm tart apples,cored, cut crosswise in 1/2 inch slices

In heavy 10-inch skillet combine corn syrup, candies, vinegar, cloves and cinnamon stick. Bring to boil over medium heat and cook and stir until candies melt.

Add enough apple slices to make a single layer in skillet and simmer just until slices are tender and transparent but do not lose their shape, 10-12 minutes. Remove with slotted spoon to clean wide-mouth jars.

Cook remaining apple slices, place in jars and pour remaining syrup over slices. Cover tightly and refrigerate at least 1 week before serving. Store in refrigerator.

Good as relish with roast meat or as topping for puddings.

Makes about 3 cups
