ROASTED BABY POTATOES WITH HERBS
1 1/2 pounds very small red, white, or yellow potatoes (if using larger potatoes, cut each into quarters or eighths) 1 tablespoon olive oil 1/2 teaspoon salt 2 green onions, thinly sliced 2 tablespoons minced fresh dill 1 tablespoon minced fresh mint
Preheat oven to 450 degrees F.
In small roasting pan (14 x 10-inch), toss potatoes with oil and salt.
Roast potatoes 25 minutes or until fork tender and golden, stirring potatoes once halfway through roasting time.
Sprinkle potatoes with green onions, dill, and mint; toss to combine. Roast potatoes 5 minutes longer to blend flavors.
