A peanut butter cookie layer topped with a sweet peanut butter icing topped with a layer of unsweetened chocolate - my kids think this is what the angels eat in heaven.

ICED PEANUT BUTTER BARS

FOR THE BASE:
2/3 cup peanut butter
1/2 cup shortening
3/4 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 cup oats

Preheat oven to 350 degrees F. Grease a 13x9-inch baking pan.

Cream together peanut butter, shortening, and sugars. Blend in eggs and vanilla.

Stir together flour, baking soda, and salt, add to creamed mixture. Stir in oats. Spread in prepared baking pan.

Bake at 350 degrees F for 20 minutes or until golden brown. Cool completely.

FOR THE PEANUT BUTTER LAYER:
1 1/2 cups powdered sugar
3 Tbsp milk
1 Tbsp butter or margarine, softened
2 Tbsp peanut butter

Mix together till smooth, spread on cooled cookie base, chill at least 30 minutes.

FOR THE CHOCOLATE GLAZE:
2 squares (1 oz each) unsweetened baking chocolate
2 Tbsp butter or margarine
(Sometimes I use 3 squares and 3 Tbsp butter, so it's easier to spread.)

Combine and melt together, spread over chilled peanut butter layer.

Refrigerate about 1 hour or until set; cut into bars. Let stand at room temperature 15-20 minutes before serving.

(Try cutting before refrigerating 1 hour? The cookie base gets quite firm.)

Makes 24 bars
