MARINATED VIDALIA ONIONS

4 large Vidalia or other sweet onions
2 cups water
1/4 cup vinegar
1 cup sugar
1 tbsp. celery seed
1/2 cup mayonnaise
saltine crackers (for serving)

Slice onions as thinly as possible and reserve.

Combine water, vinegar, sugar and celery seed and boil for 1 minute. Remove from heat.

Add thinly sliced onions to boiled mixture and let sit for 20 minutes.

Drain, then mix with mayonnaise. Chill.

Serve with plenty of saltine crackers.

Servings: 8
