FAMILY REUNION MAINE POTATO CAKE

1 cup butter, softened
2 cups sugar
2 eggs
1 cup cold mashed potatoes
1 teaspoon vanilla extract
2 cups flour
1/4 cup cocoa
1/4 teaspoon baking soda
1 cup milk
1 cup chopped walnuts

Preheat oven to 350 degrees F. Grease 9x13-inch baking pan.

Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in mashed potatoes and vanilla; set aside.

Combine flour, cocoa, and baking soda. Add to creamed mixture alternately with milk, blending well after each addition. Stir in walnuts. Pour batter into prepared pan.

Bake for 45 minutes, or until cake tests done. Cool on a wire rack. Frost, if desired.

Servings: 12
