CONTADINA GARDEN SAUCE
1 tbsp. olive oil 1 cup sliced red onion 1 cup thinly sliced yellow and green bell pepper 2 cups sliced fresh mushrooms 1/2 tsp. salt 3 tbsp. chopped fresh basil or 2 tsp. dried basil, crushed 1 (14.5 oz.) can CONTADINA® Recipe Ready Diced Tomatoes with Italian Herbs 1/3 cup (half 6-oz. can) CONTADINA Tomato Paste with Roasted Garlic 1/2 cup chicken broth or white wine
Heat oil in large skillet over medium-high heat. Add onion, garlic, bell pepper, mushrooms, salt and basil. Cook 3 to 4 minutes or until vegetables are tender.
Stir in undrained tomatoes, tomato paste and broth. Bring to boil. Reduce heat to low; cook, uncovered, 10 to 12 minutes.
Toss with hot cooked pasta or rice, or serve over grilled chicken, shrimp or fish, if desired.
