BEEF RANCHERO ROLLUPS
1 pound ground beef (or ground turkey) 1/2 cup chopped onion 1 (14.5 oz) can Del Monte@ Zesty diced tomatoes with jalapeno 1 (15 oz) can kidney beans or black beans, drained 6 flour tortilla, warmed 1 1/2 cups shredded cheddar cheese sour cream, avocado and cilantro (optional, for serving)
Brown meat and onion in large skillet; drain. Season with salt and pepper, if desired.
Add tomatoes and beans; cook over medium heat, 5 to 7 minutes, stirring occasionally until liquid is gone.
Fill each tortilla with meat mixture, cheese and sliced green onions, if desired. Roll up and top with sour cream, avocado and cilantro, if desired.
