PATTY MELTS2 tablespoons vegetable oil 1 onion, chopped 2 cloves garlic, minced 2 eggs 2 pounds lean ground beef 2/3 cup dry bread crumbs 1 teaspoon salt 1/4 teaspoon pepper 24 thin slices rye bread 24 thin slices cheddar cheese 1/4 cup olive oil In skillet, heat vegetable oil over medium heat; cook onion and garlic, stirring, for 3 to 5 minutes or until softened. Let cool. In bowl, beat eggs; mix in beef, bread crumbs, salt, pepper and onion mixture. Shape into 12 patties, each 1/2 inch thick. Cook on greased barbecue grill about 4 inches above medium-hot coals or at medium-high setting for about 5 minutes per side or until no longer pink inside. Meanwhile, trim crusts from bread. Sandwich each cooked patty between 2 slices of cheese and 2 slices of bread. Brush bread with olive oil and grill sandwiches for 1 to 2 minutes on each side or until cheese just starts to melt.
