CINNAMON TORTILLA SHELLS

"These are good on their own. Or, try filling them with custard, pudding, fruit or sugar-free, nonfat ice cream just before serving. Unfilled shells will keep for several days."

3 large, fat-free flour tortillas
Pam butter-flavor cooking spray
1 tablespoon cinnamon sugar made with Sweet 'n Low or granulated fructose

Preheat oven to 350 degrees F. Oil spray 12 large muffin cups or use nonstick pans. (You can also use small tart pans.)

Spread each tortilla out on a bread board and spray evenly with Pam.

Sprinkle evenly with cinnamon sugar. Slice into 4 quarters.

Drape each muffin cup or tart pan with a piece of tortilla. Shape it so it will hold a filling.

Bake for 5 to 10 minutes, checking frequently. When crisp, remove from oven. Place each shell on a wire rack and cool completely.

Makes 12 shells

Nutritional analysis: Serving size, 1; 46 calories; 1g protein; .44g fiber; 8g carbohydrates; .17g sugars; 1g total fat; .16g saturated fat.

Exchanges: .53 bread; .09 fat.
