CHOCOLATE GRAND MARNIER TRIFLE

FOR THE PUDDING:
1 (4-serving-size) package fat-free artificially sweetened, instant chocolate pudding
2 cups evaporated skim milk
1 1/2 tsp. vanilla
FOR THE TRIFLE:
1 1/2 cups fresh raspberries
1 tbsp. sugar
6 (1/3-inch) slices fat-free pound cake
1/4 cup all-fruit preserve of choice
1 tbsp. Grand Marnier
FOR TOPPING:
1 1/2 cups low-calorie whipped topping
unsweetened cocoa powder

Prepare the pudding mix according to package directions, using the evaporated skim milk and adding the vanilla. Refrigerate to set.

Mix together the raspberries and sugar and set aside.

TO ASSEMBLE:
Spread some jam on each slice of cake. Sprinkle each slice with Grand Marnier.

In a small trifle bowl or another glass bowl, press the cake slices, jam side up, on the sides of the bowl. Top with some of the fruit. Add some of the pudding. Repeat with the pudding and fruit.

Top the entire pudding with whipped topping. Sprinkle with cocoa powder and serve.

Servings: 6 (serving size: 1/3 cup)
