MRS. BROWN'S SCALLOPED POTATOES1/2 teaspoon butter (for greasing pan) 9 baking potatoes 2 tablespoons butter per layer, cut into pieces 2 tablespoons flour per layer Salt and pepper (to taste) Paprika (to taste) 4 cups milk (or half-and-half) 1/3 cup bread crumbs Preheat the oven to 350 degrees F. Grease a large baking dish with the 1/2 teaspoon butter. Peel the potatoes and slice into 1/4-inch chip-size slices. Cover the bottom of the dish with a layer of potatoes. Sprinkle 2 tablespoons of the butter pieces over the potatoes and sprinkle with 2 tablespoons of flour. Season with salt, pepper and the paprika. Repeat the layering process until the layers reach 1 inch from the top of the dish. (You will have about three layers.) Add the milk until it just peeks through the top layer of potatoes. Sprinkle the top layer with 2 tablespoons of butter, 2 tablespoons of flour and the bread crumbs. Bake for 1 hour or until the potatoes are tender when tested with a fork.
