SCALLOPS WITH GINGER-GREEN ONION SAUCE2 cloves garlic, peeled, minced 3 green onions, washed, ends removed, thinly sliced all the way up 2 tablespoons sugar 3 tablespoons soy sauce 2 1/2 tablespoons olive oil, divided 2 tablespoons lime juice 2 tablespoons water 1 tablespoon grated ginger 1/4 teaspoon pepper 2 pounds sea scallops (allow about 8 medium per person) Salt and pepper to taste In a small saucepan, whisk together the garlic, green onions, sugar, soy sauce, 1 tablespoon of the olive oil, lime juice, water, ginger and pepper. Bring the sauce to a simmer and set aside. In a medium sauté pan, heat the remaining 1 1/2 tablespoons of olive oil. While the oil is heating, season the scallops with the salt and pepper. When the pan is just starting to smoke, add the scallops and sear about 2-3 minutes on a side. You want a golden sear, so try not to move them around much in the pan.
