SOUTH CAROLINA BARBECUED CHOPS
4 boneless pork loin chops cut 3/4 inch thick FOR THE SAUCE: 1/3 cup prepared mustard 1/3 cup red wine vinegar 4 tsp brown sugar 1 tbsp butter or margarine 1 tsp Worcestershire sauce 1/2 tsp freshly ground black pepper 1/4 to 1/2 tsp bottled hot pepper sauce
Trim fat from pork chops, set chops aside.
TO MAKE THE SAUCE: In a small saucepan whisk together the mustard, vinegar, brown sugar, butter, Worcestershire sauce, black pepper, and hot pepper sauce. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat and cool slightly.
TO PREPARE THE CHOPS: Preheat indoor grill. Place chops on the grill rack. If using a covered grill, close lid. Grill until chops are slightly pink in the center and juices run clear. (For covered grill, allow 6-8 minutes, brushing once with some of the sauce last 1 to 2 minutes of grilling. For an uncovered grill, allow 12-15 minutes, turning once halfway through and brushing frequently with some of the sauce the last 5 minutes of grilling).
Serve chops with remaining sauce.
