LEMON PESTO FLAT IRON STEAKS
4 (6 to 8-oz each) beef shoulder top blade steaks (flat iron) 3 large cloves garlic, minced FOR THE LEMON PESTO: 1/3 cup basil pesto 1 Tbsp lemon juice 2 tsp grated lemon peel 1/2 tsp crushed red pepper
Combine last 4 ingredients to make pesto sauce and set aside.
Press garlic onto beef steaks.
Place steaks on grid over medium, ash-covered coals. Grill, covered, 10-14 minutes for medium rare to medium doneness, turning once.
Season with salt. Serve with pesto.
**For electric grill, you may need to reduce cooking time to 8-10 minutes.
