CUCUMBERS WITH YOGURT2 medium cucumbers
1 medium red onion, sliced
3/4 cup lowfat yogurt
1 tsp. lemon juice
1 clove garlic, minced
3/4 tsp. salt
1 tablespoon chopped fresh mint
Score the skins of the cucumbers with the tines of a fork and slice very thin. Place in a salad bowl with the red onion.
Combine the yogurt, lemon juice, garlic and salt. Pour the mixture over the cucumbers and garnish with fresh mint. Chill for 1 hour before serving.
Makes 4 servings
