CANADIAN MAPLE SYRUP DUMPLINGS

FOR THE SYRUP:
2 cups pure maple syrup
1 cup water
1 pinch salt
FOR THE DUMPLINGS:
2 cups all-purpose flour
4 tsp baking powder
1 pinch salt
4 tbsp butter
1 cup milk*
1/2 cup seedless raisins (for syrup)

Combine maple syrup, water, and a pinch of salt in a saucepan. Bring to a boil.

Mix flour, baking powder and salt. Sift together. Cut in butter with two knives or pastry blender. Add milk and stir to obtain a smooth paste.

Drop thick dough by spoonfuls in boiling maple syrup and allow to cook 20 minutes without removing lid from the pan.

Serve with pure maple syrup (boil to thicken, if desired) to which raisins have been added.

*It is very important to add the milk to dry ingredients at the last minute when maple syrup is ready to start cooking dumplings.
