FRESH VEGGIE PASTA SAUCE
1 cup zucchini, chopped small 1 cup yellow squash, chopped small 1 cup eggplant, chopped small 2 carrots, finely chopped 1/2 large onion, diced 2 to 3 cloves garlic, chopped black olives, finely minced fresh basil (to taste) fresh oregano (to taste) fresh parsley (to taste) 10 to 12 fresh tomatoes, chopped red wine parmesan cheese
Saute the vegetables in a pan coated with olive oil spray.
Add the cut up tomatoes and cook down.
Add a little red wine and some freshly grated parmesan. Pour over hot pasta.
