EASY SOUTHWEST BAKED POTATO TOPPER
4 hot baked potatoes FOR THE TOPPING: 1 cup plain nonfat yogurt 1/4 cup medium salsa 1 tablespoon chopped red or yellow bell pepper 1 medium green onion, chopped (1 tablespoon)
Stir together all ingredients for the topping.
Serve over hot baked potatoes.
