ALMOST GRANDMA'S SAUSAGE AND PEPPERS
2 tbsp olive oil 12 hot Italian sausages 2 red bell peppers, seeded and sliced 1 green bell pepper, seeded and diced 1 medium onion; thinly sliced 3/4 cup dry white wine 3 tbsp tomato paste 1 tbsp minced garlic 1 tsp fennel seeds salt and ground white pepper (to taste)
Heat the oil in a casserole or large skillet and cook the sausage for 2 minutes on each side.
Pour off most of the fat, add the remaining ingredients. Cover and cook over low heat for 25 minutes.
