APPLE AND SPICE PIZZA COOKIE
FOR THE COOKIE: 3/4 cup (1 1/2 sticks) butter, softened 3/4 cup white granulated sugar 1/2 cup brown sugar 1 egg 1 tsp. vanilla 1 1/2 cups flour, unsifted 1 1/2 tsp. ground cinnamon 3/4 tsp. baking soda 3/4 tsp. salt 1 medium apple, shredded (1 cup) 3/4 cup oats, uncooked FOR TOPPING: 1 (6 ounce) package chocolate chips 1 cup chopped pecans FOR THE ICING: 1/2 cup powdered sugar, sifted 2 teaspoons milk
Preheat oven to 350 degrees F. Generously grease a pizza pan.
Beat margarine, white sugar, and brown sugar together until creamy. Add in egg and vanilla and beat. Add flour, cinnamon, baking soda, and salt and beat until smooth. Stir in apples and oats. Spread evenly on prepared pizza pan.
Bake 20 to 25 minutes or until golden. Remove from oven.
While hot sprinkle with chocolate chips. Let stand until soft then spread. Sprinkle pecans on top of chocolate.
Combine powdered sugar and milk; mix until smooth. Drizzle on top of pizza cookie. |
