APPLE NUT LOAF
3 cups peeled, diced raw apples 2 cups sugar 1 cup oil 2 eggs, beaten 2 tsp. vanilla 3 cups flour 1 tsp. ground cinnamon 1 tsp. baking soda 1 tsp. salt 1 cup pecans, chopped
Preheat oven to 350 degrees F. Grease and flour a loaf pan.
Dice apples in a bowl; add sugar and let stand 20 minutes.
Stir in oil, eggs, and vanilla. Add flour, cinnamon, baking soda, and salt; mix well. Stir in pecans. Spread in prepared pan.
Bake at 350 degrees for 1 hour.
