Both DH and myself loved them. I used egg replacement and fat-free cream cheese. The dough makes exactly 13 sandwich cookies when measured by 1 1/2 Tablespoonfuls for each. (26 cookies, sandwiched together with frosting to make 13 sandwich cookies). I used granulated sugar instead of honey (I made the frosting with honey first and didn't care for the taste, think it was the type of honey I used). Next time I will make them smaller, these made very large cookies. Tasted just like carrot cake and frosting. Yum!
