DOUBLE ORANGE PUDDING1 cup orange juice
1 tsp grated fresh orange rind
3 tbsp sugar (or substitute)
2 tbsp cornstarch
6 small oranges, peel, section and discard white membrane
In a small saucepan, combine all ingredients, EXCEPT orange sections. Stir to dissolve cornstarch. Bring to a boil over medium heat, stirring. Boil 2 minutes, stirring. Remove from heat.
Add orange sections and mix gently. Pour into 1 bowl or 4 individual serving bowls. Chill.
