CINNAMON SWIRL QUICK BREAD
1 1/2 sugar, divided use 1 tablespoon ground cinnamon 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup buttermilk 1 large egg 1/4 cup vegetable oil FOR THE GLAZE: 1/4 cup confectioner's sugar 1 1/2 teaspoons milk (more if necessary)
Preheat oven to 350 degrees F. Grease the bottom only of a 9x5x3-inch loaf pan.
Combine 1/2 cup sugar and cinnamon; set aside.
Combine flour, baking soda, salt and remaining 1 cup sugar; set aside.
Combine buttermilk, egg, and oil; stir into dry ingredients just until moistened. Pour half the batter into the prepared pan. Sprinkle with half the cinnamon sugar. Carefully spread with remaining batter and sprinkle with the remaining sugar; swirl knife through the batter.
Bake at 350 degrees for 45 yo 50 minutes or when a toothpick inserted near center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely.
Combine glaze ingredients and drizzle over cooled bread.
