KEY LIME BAKED SNAPPER1 1/2 pounds red snapper fillets, or other firm white fish 2 tablespoons Key lime juice 1 tablespoon melted butter 1 1/2 teaspoons grated lime peel Salt and coarsely ground pepper to taste Pinch of nutmeg Fresh chopped parsley for garnish Fresh Key lime wedges for garnish Preheat oven to 350 degrees. Cut snapper fillets into 6 serving-size pieces. Combine the key lime juice, butter, key lime peel, black pepper and nutmeg. Mix thoroughly, then spoon over fish to cover completely. Bake uncovered, basting with pan juices until the fish flakes easily, about 15 minutes or even less for very thin fillets. Garnish fish with fresh parsley sprigs and lime wedges. Serves 4.
