SUNSHINE RICE WITH BASIL AND PARMESAN2 quarts water 1 cup arborio rice 1/2 cup yellow onion, chopped 1/2 cup fresh parsley, finely chopped 1 tablespoon butter 2 tablespoons fresh basil 1 tablespoon fresh lemon juice 1 teaspoon grated lemon peel 1 teaspoon salt 1/4 cup low-fat parmesan cheese, grated fresh basil sprigs or lemon slices (for garnish) Bring water to boil in medium saucepan. Add rice and onion and continue to boil until rice is tender, approximately 20 minutes. Drain. Mix parsley, butter, basil, lemon juice, lemon peel and salt in a medium bowl. Add rice mixture and stir until thoroughly mixed and butter has melted. Add parmesan and toss. Garnish with basil sprigs or lemon slices.
