GRILLED POTATOES WITH CHEESE4 baking potatoes, about 6 oz. each 1 large onion, sliced 1/4 cup grated Parmesan 4 tsp. butter Salt, fresh-ground pepper Peel potatoes and slice. Butter 4 squares of heavy-duty foil. Pile a sliced potato on the buttered side of each square. Top with some onion, cheese, 1 teaspoon butter and salt and pepper. Wrap foil loosely around potatoes and seal with a double fold. Grill over hot coals for 30 minutes, turning once, until potatoes are tender.
