CHIFFON PARFAITS

1 cup sliced fresh or thawed frozen strawberries, drained
3/4 cup boiling water
1 package (4-serving size) JELL-O Brand Strawberry Flavor Sugar Free Gelatin
1/2 cup cold water
Ice cubes
1 cup thawed COOL WHIP
1/2 teaspoon almond extract

Spoon strawberries into parfait glasses.

Pour boiling water into blender. Add gelatin. cover and blend at low speed until gelatin is completely dissolved, about 30 seconds.

Combine cold water and ice cubes to make 1 1/4 cups. Add to gelatin and stir until ice is partially melted. Then add whipped topping and almond extract. Blend at high speed for 30 seconds.

Pour over berries in glasses. Chill until set, about 30 minutes.

VARIATION:

RASPBERRY CHIFFON PARFAITS:
Prepare Chiffon Parfaits as directed, substituting 1 cup fresh raspberries and triple berry flavor gelatin for the strawberries and strawberry flavor gelatin.

Makes 3 1/2 cups or 7 servings
