TOMATO AND FETA SALAD WITH LEMON VINAIGRETTE
FOR THE DRESSING: 7 tablespoons extra-virgin olive oil 4 tablespoons fresh lemon juice 3 tablespoons whole-grain mustard 2 garlic cloves, minced 2 teaspoons grated lemon zest (yellow part only) Salt and pepper FOR THE SALAD: 16 ripe cherry tomatoes, halved 1 1/2 cups chopped red bell peppers 1 1/2 cups crumbled feta cheese 1 cup chopped green onions 1 cup croutons
Whisk together the oil, lemon juice, mustard, garlic and lemon zest in a small bowl to blend. Season dressing with salt and pepper.
Gently mix tomatoes, bell pepper, feta and green onions in a bowl. Add dressing and toss to coat.
Just before serving, add croutons and season to taste with salt and pepper.
