LEMON ICEWhole lemons, hollowed out
3 1/2 cups water
1 1/4 cups sugar
3/4 cup fresh lemon juice
2 Tablespoons lemon zest
Mint leaves (for garnish)
Boil water, stir in sugar until dissolved, add lemon juice and zest. Freeze in a bowl.
Remove from freezer, beat till fluffy, fill hollowed out lemons with the mixture and refreeze till ready to serve.
Tuck mint leaves in the ice when ready to serve.
