BLUEBERRY BUTTERMILK ICE CREAM2 cups fresh or frozen blueberries
1/4 cup nonfat buttermilk
1/2 cup superfine sugar
1/4 cup orange juice
Place blueberries, buttermilk, sugar and orange juice in a food processor or blender. Process until smooth.
Pour into a square freezer-safe pan. Freeze for 2 hours and 30 minutes, stirring frequently to equally distribute the ice crystals.
Allow to soften slightly at room temperature before serving.
