COCKTAIL SHRIMP12 oz. beer
2 Tablespoons crab-boil seasoning (such as Old Bay)
1/2 teaspoon hot pepper sauce
1/2 cup vinegar
1 lb. large shrimp, peeled and deveined
FOR SERVING:1 cup cocktail sauce
4 lemon wedges
In a large microwave-safe bowl, mix the beer, crab seasoning, hot-pepper sauce and vinegar. Microwave on high for 5 to 7 minutes or until simmering.
Stir in the shrimp and microwave on high for 3 to 5 minutes, stirring once, until just bright pink. Remove from the microwave and let stand for 10 minutes.
Drain off the liquid, then cover and refrigerate the shrimp for at least 2 hours and up to 8 hours.
Serve cold, with the cocktail sauce and lemon wedges.
