EGGS FLORENTINE QUICHE10 eggs well beaten
12 ounces creamed cottage cheese
2 cups grated cheddar cheese (8 ounces)
1 cup grated Swiss cheese
4 tablespoons butter
1 teaspoon ground nutmeg
2 packages (10 ounces each) frozen chopped spinach thawed
Preheat oven to 350 degrees F. Spray 2 large quiche pans or pie plates with cooking spray.
In a large bowl combine all of the ingredients except for the spinach. Drain the spinach and add to the egg mixture. Pour the mixture in to the prepared pans.
Bake in a 350 degree F oven for 30 minutes. Serve
