AVOCADO ANGELS"Avocado takes the place of the yolk."
2 ripe Haas avocados
1 tablespoon fresh lime juice
1 finely chopped garlic clove
salt to taste
2 tablespoons finely chopped fresh cilantro
12 hard-cooked eggs, peeled, cut in half, and yolks discarded or set aside for another use
Cut the avocados in half, remove the pits, peel and cut into cubes. Place in a medium-size bowl, add the lime juice, garlic and salt and mash to blend. Stir in cilantro.
Fill the whites evenly with the avocado mixture.
Makes 24 halves
