MIGHTY NUTTY FISH STICKS8 ounces fish 4 egg whites 1 cup ground nuts (if you are allergic, you can substitute oat or barley flour in the same quantity) 4 pinches salt 4 pinches black pepper 1 cup extra-light olive oil FOR SERVING:4 cups snow peas 8 celery stalks, cut into 4 sticks each 2 pears, cut into four quarters Cut fish into bite-size pieces. Pour egg whites into a small bowl. Roll fish in egg whites to cover each piece evenly. Put nuts in coffee grinder to make a nutty flour. In a small plastic bag, combine the nuts, salt and pepper. Add fish and gently roll to coat with nut mixture. Heat olive oil in small frying pan. Add fish, cooking for 3-4 minutes on each side. When fish is cooked through, remove from pan.
