BEEF WITH ASPARAGUS AND CHERRY TOMATOES24 asparagus spears, cut diagonally into 1/2-inch pieces 10 ounces lean boneless beef sirloin, cut into 1/4-inch strips 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/2 cup diagonally sliced scallions (1/2-inch slices) 1 garlic clove, very thinly sliced 24 cherry tomatoes In large nonstick skillet, combine asparagus and 1/4 cup water; bring liquid to a boil. Reduce heat to low; simmer 2 minutes, until asparagus are just tender and water is evaporated. Sprinkle beef on all sides with salt and pepper; add beef, scallions and garlic to cooked asparagus. Cook, stirring frequently, 4 minutes, until beef is cooked through. Add tomatoes; cook, stirring frequently, 2 minutes, until tomatoes are heated through.
