OLD-FASHIONED RICE PUDDING4 cups milk, divided use
1 cup converted rice
4 eggs
1/2 cup sugar
1 tablespoon butter, melted
1 1/2 tablespoons vanilla
1/2 teaspoon salt
1/2 cup raisins
1 teaspoon nutmeg
Preheat the oven to 350 degrees F.
Combine 2 cups of milk and the rice in a medium saucepan and bring to a boil. Turn the heat to low and cook 15 to 20 minutes, or until the rice is tender. Remove from heat.
In a small mixing bowl, beat the eggs well and add the sugar. Beat in the remaining 2 cups of milk, the butter, vanilla and the salt, and blend well. Stir together the cooled rice mixture, egg mixture and raisins.
Pour the pudding into an 8-by-8-inch pan and dust the top with nutmeg. Place the pudding pan in a larger pan filled with water that reaches about 2/3 of the way up the sides.
Bake for 30 minutes or until set.
