MANGO AND RED BELL PEPPER SALSA

"This colorful salsa makes an excellent accompaniment to grilled chicken. Try substituting a small chopped jalapeno pepper for the red chili pepper for an interesting twist."

1 mango, peeled, pitted and finely diced
1 small red bell pepper, seeds and membrane removed and finely diced
1 small red chili pepper, thinly sliced
1/4 cup lime juice
2 tablespoons finely chopped fresh cilantro (fresh coriander)

Combine all ingredients in a bowl. Let stand, covered, at room temperature for 1 hour to allow flavors to combine. If not using immediately, refrigerate.

Makes 1 1/4 cups
