PERINI RANCH STEAK RUBTom Perini, author of "Texas Cowboy Cooking" calls this his "magic dust." It works great with sirloin or more expensive cuts. Just sprinkle or rub it into your favorite steak before grilling. (Keep extra in a baggie in the freezer.) 1 teaspoon cornstarch or flour 1 tablespoon salt 1 cup coarsely ground black pepper 1 teaspoon dried oregano 1 teaspoon garlic powder 1 teaspoon paprika 1 tablespoon granulated beef stock Mix together the cornstarch, salt, black pepper, oregano, garlic powder, paprika and beef stock.
